No-Bake Peanut Butter Cheesecake Balls

These rich, creamy, and bite-sized peanut butter cheesecake balls are the perfect no-bake treat! Easy to make with just a few ingredients, they’re great for parties, gifts, or a quick dessert.

Ingredients:

  • 8 ounces cream cheese, softened
  • 1/2 cup peanut butter (creamy)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups graham cracker crumbs
  • 1 1/2 cups chocolate chips (semi-sweet or milk chocolate)
  • 1 tablespoon coconut oil or vegetable shortening (for melting chocolate)
  • 1/4 teaspoon salt
  • Crushed peanuts or extra graham cracker crumbs (optional, for garnish)

Directions:

  1. Mix the Base: In a mixing bowl, beat the softened cream cheese, peanut butter, powdered sugar, vanilla extract, and salt until smooth and creamy.

  2. Form the Balls: Add the graham cracker crumbs and mix until fully combined. The mixture should be firm enough to roll into balls. If too soft, refrigerate for 15–20 minutes.

  3. Shape & Chill: Roll the mixture into small bite-sized balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet. Chill in the refrigerator for at least 30 minutes.

  4. Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each, until the chocolate is fully melted and smooth.

  5. Dip the Cheesecake Balls: Using a fork or a toothpick, dip each cheesecake ball into the melted chocolate, coating it evenly. Let any excess chocolate drip off before placing it back on the parchment paper.

  6. Garnish & Set: Sprinkle crushed peanuts or graham cracker crumbs on top while the chocolate is still wet. Let the chocolate set by chilling the balls in the refrigerator for another 20–30 minutes.

  7. Serve & Enjoy! Store in an airtight container in the fridge for up to a week or freeze for longer storage.
