These rich, creamy, and bite-sized peanut butter cheesecake balls are the perfect no-bake treat! Easy to make with just a few ingredients, they’re great for parties, gifts, or a quick dessert.
Ingredients:
- 8 ounces cream cheese, softened
- 1/2 cup peanut butter (creamy)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups graham cracker crumbs
- 1 1/2 cups chocolate chips (semi-sweet or milk chocolate)
- 1 tablespoon coconut oil or vegetable shortening (for melting chocolate)
- 1/4 teaspoon salt
- Crushed peanuts or extra graham cracker crumbs (optional, for garnish)
Directions:
-
Mix the Base: In a mixing bowl, beat the softened cream cheese, peanut butter, powdered sugar, vanilla extract, and salt until smooth and creamy.
-
Form the Balls: Add the graham cracker crumbs and mix until fully combined. The mixture should be firm enough to roll into balls. If too soft, refrigerate for 15–20 minutes.
-
Shape & Chill: Roll the mixture into small bite-sized balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet. Chill in the refrigerator for at least 30 minutes.
-
Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each, until the chocolate is fully melted and smooth.
-
Dip the Cheesecake Balls: Using a fork or a toothpick, dip each cheesecake ball into the melted chocolate, coating it evenly. Let any excess chocolate drip off before placing it back on the parchment paper.
-
Garnish & Set: Sprinkle crushed peanuts or graham cracker crumbs on top while the chocolate is still wet. Let the chocolate set by chilling the balls in the refrigerator for another 20–30 minutes.
-
Serve & Enjoy! Store in an airtight container in the fridge for up to a week or freeze for longer storage.
