Tiramisu Cake Roll – A Creamy and Delicious Dessert

Ingredients:

For the sponge cake:

 

4 eggs

1/2 cup sugar

1 teaspoon vanilla extract

1/2 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

For the filling:

 

1 cup mascarpone cheese

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon instant coffee (dissolved in 2 tablespoons warm water)

For topping:

 

1/2 cup whipped cream

Cocoa powder for dusting

Instructions:

Preheat the oven to 350°F (175°C). Line a baking tray with parchment paper.

Make the sponge cake: In a bowl, beat the eggs and sugar until fluffy. Add vanilla extract. Sift in the flour, baking powder, and salt, then gently fold them in.

Bake the cake: Pour the batter into the tray and spread evenly. Bake for 10-12 minutes until golden.

Roll the cake: While warm, roll the cake with a clean towel to shape it. Let it cool.

Prepare the filling: Whip the mascarpone, cream, sugar, and vanilla until smooth. Add dissolved coffee and mix.

Assemble the roll: Unroll the cake, spread the filling evenly, then roll it back carefully.

Chill and decorate: Cover with whipped cream, dust with cocoa powder, and refrigerate for an hour before serving.
