Instructions

  1. Preheat Oven
    • Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper or lightly grease it.
  2. Prepare the Marinade
    • In a small bowl, whisk together soy sauce, honey, rice vinegar, garlic, ginger, and red pepper flakes (if using).
  3. Season the Chicken
    • Place the chicken breasts in a large bowl or zip-top bag. Pour half the marinade over the chicken and let it marinate for at least 15 minutes (or up to 2 hours in the refrigerator).
  4. Prepare the Vegetables
    • Toss the bell peppers, red onion, broccoli, and pineapple chunks with olive oil, salt, and pepper. Spread them evenly across the prepared sheet pan.
  5. Add Chicken to the Pan
    • Remove the chicken from the marinade and place it on top of the vegetables. Discard any leftover marinade.
