Delicious creamy broccoli soup

★Ingredients

2 tablespoons olive oil or butter

1 medium onion, diced

3 garlic cloves, minced

4 cups fresh broccoli florets

3 cups vegetable broth (or chicken broth)

1 cup heavy cream (or milk for a lighter option)

Salt and pepper to taste

Optional: Fresh parsley for garnish

★Instructions

  1. Sauté Aromatics:
    Heat the olive oil or butter in a large pot over medium heat. Add the diced onion and garlic, and sauté until they are soft and fragrant.
  2. Cook the Broccoli:
    Add the broccoli florets to the pot and stir for about 2-3 minutes. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 10-15 minutes, or until the broccoli is tender.
  3. Blend the Soup:
    Use an immersion blender to purée the soup until smooth. Alternatively, transfer the mixture to a blender, blend until creamy, and return it to the pot.
  4. Add Cream:
    Stir in the heavy cream and let the soup simmer for another 2-3 minutes. Adjust the seasoning with salt and pepper.
  5. Serve and Garnish:
    Ladle the soup into bowls and garnish with steamed broccoli florets and fresh parsley if desired. Serve warm with crusty bread.
