Modern jammy egg salad 🥚
▪️6 Eggs▪️3 Tbsp Shallot, diced small▪️2 Tbsp Pickle, diced small▪️2 Tbsp Dill, minced▪️1 tsp Olive Oil▪️Salt & Pepper, to taste▪️Toast, for serving▪️
1️⃣ Bring a pot of water to a gentle boil and then lower your eggs in with a slotted spoon (don’t drop them in bc they will crack easily); boil for 7 minutes and then transfer to an ice bath for at least 2+1/2 mins to stop them from over cooking – peel gently by cracking the eggs all over and removing the shell in small pieces
2️⃣ Chop the eggs into small pieces and mix with the shallot, pickle, dill, olive oil, and salt and pepper to taste
3️⃣ Serve on toast with some additional dill and finishing salt on top – enjoy!
