One of my favorite weeknight dinners


– Chicken breast; seasoned with salt, pepper, garlic powder & paprika
– Pesto; I do 1- 1 1/2 tbsp for each chicken breast (See previous post for my pesto recipe!)
– Mozzarella: 2 thin slices for 1 chicken breast
– Tomato slices: 2 for 1 chicken breast
– Parmesan
– Salt/Pepper

I love to have this with one serving of pesto pasta and some sautéed zucchini! Tip: pour the juice that’s left in the baking dish in with your pesto pasta or on top of the chicken for extra flavor😋
