Semolina scrumptious Persian Love Cake at home

Here’s how you make this scrumptious Persian Love Cake at home ☺️

Ingredients :
Suji/ Rava – 3/4th Cup
Maida – 6 Tbsps
Baking Powder – 1 tsp
Baking Soda – 1/4th tsp
Salt – a Pinch
Milk – 3/4th Cup
Sugar – 3/4th Cup
Oil – 6 Tbsps
Dahi – 6 Tbsps
Cardamom Powder – 1/4th tsp
Dried Rose Petals – to Garnish
Pistachios – to Garnish

Syrup :
Honey – 1/3rd Cup
Rose Water – 2 Tbsps
Lemon Juice – 1 Tbsp
Saffron – 4 to 5 Strands mixed with 1 Tablespoon of warm water

Process :
* Add suji/ semolina, milk & curd to a bowl – whisk & set aside for 25-30 mins (this will ensure the semolina hydrates well)
* Meanwhile, to make the syrup – mix honey, rose water, lime juice & saffron water together – keep aside for later
* Once the semolina has hydrated, add in the oil, sugar, sifted maida, baking powder, baking soda, salt & cardamom powder – whisk it until lump-free and well combined
* Pour the batter in a 6” inch greased cake tin & bake in a pre-heated 170C oven for around 40 minutes or until a skewer inserted comes out clean
* Once the cake has cooled down slightly, pour in the honey syrup while the cake is still warm. Pour a little bit at a time and let the cake soak it all up. Let the cake cool down completely & then demold it
* Garnish with some dried rose petals & chopped pistachios, Serve & Enjoy 🎂💓
