Chicken shawarma

2kg boneless chicken thighs
3 tbsp lemon juice
3 tbsp vinegar
2 tbsp olive oil
1/2 cup yogurt
1tbsp garlic paste
1tbsp ginger paste
Ginger powder
Ginger powder
Mixed spices
Clove powder
Citric acid

Cook on a hot pan for 10 mins then cover the pan and cook for another 15 mins

Garlic sauce/ toum:
7 garlic cloves
1 egg white
2 tbsp lemon juice
1 tsp salt
1 tsp Citric acid
100ml veg oil – add very slowly and consistently

Assemble your wraps with pickled cucumber and pan fry for 4 mi
