Maqlouba – Ground Beef Edition
Ingredients:
•2 medium potatoes
•1-2 eggplants (1 was used in the video)
• 1 roma tomato
• 1 red onion/ shallot (caramelized for garnish)
•1 lb of ground beef
• 2 tbsp of tomato paste
•2 cups of short grained rice (calrose, italian, egyptian, australian rice.. etc)
•2 cups of water for the rice
•1/2 cup of water for ground beef
• olive oil as desired
• frying oil <for frying option>
Seasonings:
All spice
Black pepper
Ground coriander
Cayenne pepper
Paprika
Garlic powder (optional)
1. Slice veggies into slices: eggplants, potatoes and tomatoes
2. Generously salt raw eggplants in a bowl & leave it to release its waters (helps the eggplants not absorb as much oil when frying)
3. Once water is release, squeeze all the eggplant juices out, rinse the salt & pat dry, then fry
4. Season potatoes, lightly brush with olive oil and airfry them
5. Repeat the same with tomatoes (no need for frying)
6. Caramelize onions for garnish
7.Cook the ground meat with tomato paste & seasoning
8.Rinse short grained rice atleast 3 times to excess eliminate starch & season with spices & olive oil
9. Time to layer: potatoes then eggplants, tomatoes, ground beef, and rice.
10. Once the layers are tightly packed, add water: 2 cups of water for 2 cups of rice
11. Medium high until water slightly evaporates for 2 minutes then cook for 20-23 minutes on low heat with lid on & let it cool down for about an hour before flipping on a serving dish
